Acquerello, a Michelin-starred restaurant in Fagnano Olona, a small town in the province of Varese, Northern Italy, is quite unique. There is no traditional menu; instead, the chef curates the experience, guiding you through a sensory journey that pairs authentic, complex, and truly intriguing flavors. It is an immersive experience—one that we thoroughly enjoyed. Located in the heart of the town, the restaurant is easily accessible from both Milan and Varese. It is relatively small, and with the tables spaced well apart, the number of seats is quite limited, so be sure to book well in advance. While there is no dedicated parking lot, the town is small enough that finding a spot nearby, even for a high-end vehicle, is never an issue. It is certainly a place worth trying, and I hope you will appreciate it just as much as we did.
