Moulin de Cambelong, Conques-en-Rouergue, Occitanie, France. A timeless old mill.

The Moulin de Cambelong, located in Conques-en-Rouergue in the Occitanie region, is an old mill that has been completely renovated with style and taste: it is truly a feast for the eyes.
Situated right on a small river, it now operates as a 4-star hotel, featuring both a Michelin-starred restaurant and a "bistronomic" (casual fine-dining) restaurant. Unfortunately, the gourmet restaurant was closed on the evening we spent at the mill; this gives us a perfect excuse to return to taste the cuisine at Émilie & Thomas restaurant. Also because we weren't very impressed by the bistronomic restaurant, also mentioned in the guide, which offered a very limited menu and uninspiring food.
We stayed in the suite located in the tower; it was very spacious and beautiful. Given that it’s an old mill, the windows are somewhat narrow, and the small, overhanging wooden terrace—built from "aged" timber—felt a bit daunting!
Breakfast the next morning was excellent, and overall, our experience was very pleasant.
There are no elevators, but the staff is incredibly kind and will happily carry your luggage all the way up to the tower! Moulin de Cambelong
